Creamy Tomato Rigatoni Pasta with Italian Mozzarella
This Tomato Rigatoni Pasta is a super quick meal ready in just 20 minutes! I’m a big fan of quick and easy dinners, especially when they taste so good. Melted mozzarella cheese makes it delicious and the basil adds even more flavour!

This is one of our favourite meals to make when we have friends over for dinner. It’s so easy to make and everyone loves it! If you are looking for an easy dinner recipe for this weekend, I recommend making some tomato rigatoni pasta with Italian mozzarella cheese!
The best part about this meal is that it can be easily customised to your taste buds. You can add more or less garlic, adjust the amount of basil and change up the cheese if you want!



You can easily make this recipe vegetarian by substituting the bacon with some vegan bacon bits or skipping it completely if you wish. This recipe makes 2 large servings or 3 smaller ones if you want to serve them as a starter before your main meal.

Creamy Tomato Rigatoni Pasta with Italian Mozzarella

6 slices smoked bacon
1 tbsp cooking oil
200 g Rigatoni pasta
2 tbsp olive oil
1 clove garlic, finely chopped
1 medium onion, finely diced
Seasonings: 1 tsp oregano, 1 tsp chilli flakes (or to taste), 1/2 black pepper
3 tbsp tomato paste
200 ml double cream
150 ml pasta water
2 tbsp parmesan, grated
125 g Italian mozzarella, sliced
fresh basil
salt to taste
Directions
- Cut bacon slices horizontally into chunks. Place bacon chunks on a frying pan with cooking oil and fry over medium heat for a few minutes until golden brown. Drain and leave aside.
- Bring large pot of salted water to a boil over high heat. Add rigatoni pasta, reduce heat to medium and cook to al dente according to package directions.
- Meanwhile, heat olive oil on a large pan. Add chopped onion and garlic. Fry on a medium-low heat until softened.
- Add oregano, chilli flakes and tomato pasta. Combine and cook for about 1 minute (do not let the onion burn).
- Add cream, combine with tomato mixture. Stir in bacon and pasta water, and simmer over medium heat for about 1 minute until slightly thickened, then add parmesan,
- Add pasta and toss to combine with the sauce. Add mozzarella and carefully combine with pasta. Simmer over low heat for about 1 minute until cheese starts melting.
- Divide pasta evenly among serving bowls. Top with fresh basil. Enjoy!
