How to make the most Crispy Smashed Potatoes?

With a simple smashing method these Crispy Parmesan Smashed Potatoes are made to be perfect. Start from parboiling potatoes in salted water until fork tender. Then place them on a baking tray and smash each potato. Brush with parmesan and olive oil mixture with addition of some herbs and spices. Bake in the oven for about 30 minutes until golden and perfectly crispy!

Ingredients

  • Parmesan Smashed Potatoes:
  • 500 g baby potatoes

  • 1 tsp salt

  • 80 ml extra virgin olive oil

  • 3 tbsp parmesan cheese, freshly grated

  • Herbs and spices: 1 tsp dried oregano, 1 tsp smoked paprika powder, 1/4 tsp ground black pepper

  • Whipped Feta Herb Dip:
  • 100 g feta cheese

  • 200 g greek yogurt

  • 1 clove garlic

  • handful fresh parsley, dill and chives

  • 1/4 tsp ground black pepper

  • 1/4 lemon, juiced

Directions

  • Parmesan Smashed Potatoes:
  • Wash potatoes under running water and clean any dirt and sprouts. Transfer to a pot and cover with cold water. Add salt and boil about 12-15 minutes until fork tender.
  • Preheat oven to 2000C (4000F). Place parboiled potatoes on a baking tray lined with parchment paper. Smash each potato with a glass until thin (they might fall apart slightly, but do not worry about it).
  • In a small bowl combine olive oil, parmesan, herbs and spices. Brush over each smashed potato. Bake for 25-30 minutes until golden brown.
  • Remove from the oven. Let them sit for about 2-3 minutes then serve with whipped feta herb dip.
  • Whipped Feta Herb Dip:
  • Place feta cheese, greek yogurt, garlic, fresh herbs and lemon juice in a food processor. Process until smooth.
  • Transfer to a serving bowl and enjoy with smashed potatoes!

Notes

  • For extra crispy results smash potatoes very thin. Do not worry if they fall apart – they will set during roasting.
