How to make Raspberry and White Chocolate Overnight Oats?

This is an easy recipe, all you need to do is mix together the ingredients in a jar or a container and leave it overnight in the fridge. In the morning, you need to top it with smashed raspberries and white chocolate layer and you’ll have a creamy, cold and delicious breakfast that will keep you full until lunchtime.

The raspberries give this recipe a fresh and summery taste, while the white chocolate adds some sweetness, which is balanced by the natural sweetness of the berries.

I have made a lot of different flavours over the years, but this raspberry and white chocolate overnight oats is probably my favourite so far. It is rich and creamy with a hint of tartness from the raspberries. The white chocolate gives it an extra dimension that makes it taste like dessert!

This recipe makes only 1 serving, but you can easily double or triple ingredients and keep in the fridge for a perfect breakfast every morning!

Ingredients

  • 150 ml milk (e.g. almond milk)

  • 1 tbsp yogurt (e.g. greek-style coconut yogurt)

  • 1 tsp chia seeds

  • 2 tbsp maple syrup or honey

  • 50 g rolled oats

  • Topping:
  • 100 g raspberries

  • 50 g white chocolate, melted

  • 1 tbsp yogurt (e.g. greek style coconut yogurt)

  • white chocolate chunks

Directions

  • Put all ingredients in a jar or container and mix well until combined.
  • Seal up the jar or container and refrigerate overnight or at least 2-3 hours until mixture is thick.
  • In the morning or when ready to eat, smash raspberries with a fork (you can leave a few raspberries for decoration) and layer on top of porridge.
  • Melt white chocolate in the microwave, then stir in yogurt. Pour over raspberry layer.
  • Top with remaining raspberries and white chocolate chunks. Enjoy!

Notes

  • Overnight oats can last up to 5 days if stored properly in the refrigerator and depending on the freshness of the ingredients used.
