Roasted Garlic Cheesy Bread
Roasted garlic cheesy bread is one of my favourite appetizers to make. It’s super easy and always a hit! It’s crispy on the outside and soft on the inside with a hint of garlic flavour.

You can use any kind of bread for this recipe, but I like to use partly baked baguettes because those are the ones that are soft and chewy inside, but still crispy on the outside.
If you prepare roasted garlic in advance (you can keep it up to 2 days in the fridge), then your garlic bread will be ready in as little as 20 minutes!
This recipe makes enough for 4 people as an appetizer or 2 as an entree side dish (with soup or salad) or breakfast. But feel free to double or triple the recipe as needed!

1 white baton/baguette/rustic bread
2 heads garlic
1 tsp olive oil
salt and black pepper to taste
125 g unsalted butter, very soft
1/2 bunch fresh parsley, finely chopped
3 tbsp parmesan cheese, grated
100 g mozarella cheese, grated
Directions
- Preheat oven to 2000C. Use sharp knife to carefully cut the top of each garlic head. Do not peel. Place garlic heads on a square piece of aluminium foil. Drizzle olive oil over the top of garlic heads, add pinch of salt and pepper and bring the edges of the foil around the garlic and twist to close. Roast garlic in the oven for 40 minutes, then remove from the foil and cool slightly.
- In the meantime, place soft butter, parsley, pinch of salt and parmesan cheese in a medium-sized bowl and combine. Then add roasted garlic by squeezing the garlic shells with your fingers. Use a fork to smash garlic and combine it well with butter mixture.
- Cut the bread or baguette in half, lengthwise, into two halves. Spread butter mixture over each half. Sprinkle the mozarella cheese over two prepared slices.
- Place on a baking tray and bake in the oven for 12-15 minutes until golden brown. Slice and serve hot. Enjoy!

- You can prepare roasted garlic in advance and keep in the fridge in air-tight container up to two days.
